Creating these delicious churro sugar cookies is actually super easy to make! Plus, it doesn’t require a trip to the parks – most ingredients can be found in your pantry or a quick visit to your local grocery stores.
Before we begin, one thing you’ll need to have before making these cookies is a Mickey-Shaped Cookie Cutter. The one I linked is from Amazon and is super cheap, AND you get multiple sizes.

Ingredients
Cookies:
- 3⁄4 C sweet cream butter (soft) 3⁄4 C white sugar
- 1⁄4 C light brown sugar
- 1⁄2 Tbsp pure vanilla extract
- 2 large eggs
- 2 1⁄2 C all-purpose flour
- 1 tsp baking powder
- 2 tsp ground cinnamon Frosting:
- 1⁄4 C sweet cream butter (soft) 2 Tbsp light brown sugar
- 1⁄2 tsp ground cinnamon
- 1 tsp pure vanilla extract
- 1 C powdered sugar
Garnish:
- Sparkling Sugar Sprinkles
Instructions:
- Add flour, baking powder, and cinnamon in a medium-sized bowl.
- Whisk the ingredients together, Set aside.
- Add the soft butter, white sugar, and brown sugar in a large mixing bowl.
- Use a hand mixer beating until light and fluffy.
- Add the eggs and vanilla and continue beating until all ingredients are combined.
- Slowly add 1/4th of the flour mixture to the wet mixture, continuing to beat while adding.
- Once blended, add another fourth of the flour mixture, beating it while adding.
- Continue to repeat this process until all of the dry ingredients have been incorporated into the wet ingredients.
- Beat until the cookie dough forms. (You can use your hands to mix the ingredients.)
- Cover the bowl of cookie dough with plastic wrap and put in the refrigerator for an hour.
- Preheat oven to 400 degrees.
- Line a cookie sheet with parchment paper. Set aside.
- Sprinkle flour on a cutting board or countertop.
- Dump the bowl of cookie dough on the flour.
- With a rolling pin, roll the dough out to 1⁄4 -1⁄8 inch thick.
- Use your Mickey head cookie cutter to cut out the cookies.
